Cucumber Onion Salad with Feta

This is a classic combo -- thinly sliced cucumbers and onions with sweetened vinegar. Perfect for hot summer days!

  • 4 cucumbers
  • 1 sweet onion
  • dill a few sprigs, chopped
  • 1 cup white vinegar
  • 1/2 cup water
  • 1/2 cup sugar
  • salt
  • Feta crumbled (optional)


  1. Thinly slice the onions and cucumbers and place in a medium bowl.
  2. Combine the vinegar, water, and sugar in a small saucepan over high heat and bring to a boil. Pour the boiling liquid over the cucumbers and toss to coat. Add dill, and salt to taste.
  3. Cover the salad and place in the refrigerator for at least an hour. Serve topped with crumbled feta if desired.
