Roasted Baby Pam Pie Pumpkin with beet greens

Brr! If I thought it was chilly last week, I was forgetting that there was — almost — nowhere to go but down. There’s been no more eating dinner on the porch or feeling tinges of wistfulness about the end of summer. Fall is HERE. There are some benefits, though — Dusty and I heat our home with a woodstove, and this week marked the first fire of the season, an event that takes the chill off the coming winter, both literally and figuratively.

To further nourish our souls, Dusty’s been roasting pie pumpkins and acorn squash, either with olive oil for dinner, or with brown sugar and Apple Valley butter for dessert. It’s incredibly easy, and a bonus of the pie pumpkins is that the seeds practically slide right out, so prep takes just a minute.

Not many changes to the list this week, but we are seeing a reappearance of yummy snack peppers, spaghetti squash, and the very exciting introduction of chestnuts!
