Over the course of this hot summer, Dusty and I ate a lot of Caprese salad. As it’s gotten cooler, though, we’ve been having a slightly harder time keeping up with the tomatoes. After all, even though one of our goals of summer is to eat all.the.Caprese, tomatoes keep going after summer is over. With summer gone, we’re craving heartier fare — maybe not full-blown comfort food, but something approaching it.
Since we can now handle the idea of having the stove on for a long time, we made this this amazing collards recipe (passed to us by Raising the Bar‘s Timishia); since we want something warming, we made tomato soup, served with some jalapeno cheddar bread I found in the freezer; and since the seasonal overlap between being willing to use the oven and having access to fresh corn and tomatoes is oh-so-short, we made this Corn and Tomato Gratin.
A bonus was that we had all of the ingredients — or at least reasonable substitutes — on hand, and the vast majority of them came from the market, either via R&R, another market stand, or a CSA delivered to us at the market. For the collards we used three bunches of collards (to ensure lots of leftovers) from two different farms; fish peppers, tomato, onions, and garlic all from the stand; lemon from Green Ridge Acres; lard instead of coconut oil; and coconut milk from…the Asia Mall (but we did have it on hand already!). The tomato soup was entirely made from stand ingredients, save splashes of olive oil and red wine vinegar (and salt) — tomatoes, a carrot, garlic, thyme, and a good splash of heavy cream. For the Corn and Tomato Gratin, we used the remainder of the baguette we didn’t finish on Saturday for breadcrumbs; Parmigiano Reggiano from Hummers; tomatoes, corn, basil, butter, milk, and cream all from the stand. The accompaniments, too, were all market-sourced — North Mountain Pastures pork chops (from our CSA) seasoned with Calicutts’ Caribbean blend with the collards; McGrath’s Bakehouse Jalapeno Cheddar bread (from the freezer) with the tomato soup; and pork (NMP again) and sage meatballs with the gratin.
I could wax poetic about the joys of both eating and shopping locally….but I think Dusty’s about to start stir frying a slew of Village Acres peppers to accompany the Asian-spiced pork I braised earlier this evening, and that won’t take long!
