I think that over the next few weeks, I’ll have a lot more to say, but for tonight, I’m going to mostly leave it at the quick things above. The weather for the past few days, you may have noticed, has been markedly different from the days that preceded, and while the forecast is showing some improvement (here, certainly not everywhere), it sure looks and feels like a season shift is underway. It’s the time of year when my focus shifts from wanting to eat caprese and watermelon for every meal to thinking about how to use the bounty of late summer in more cozy ways. My sausage consumption goes up. My pasta consumption goes up. More is cooked, less is raw. The most obvious answer here is some version of sausage and peppers over pasta. So here’s a picture of it — topped with a nice dose of Royer Mountain.


This week’s Staff Pick from Dusty

Royer Mountain Alpine Cheese – normally $21.75/lb; this week $18.48

Despite our passion for eating as locally as possible, we of course make exceptions for what are sometimes called ‘Marco Polo’ items — foods that come from around the world, that can’t be produced in our locality, and that are stable and preserved in such a way that they would have survived a long voyage across the high seas in the hold of a merchant ship in the 13th century (give or take a few hundred years). Among these (for us) are spices, coffee, olive oil, rice, salted anchovies, certain libations, and… Parmigiano Reggiano. Until recently, that is.

We have fallen utterly and completely in love with Clover Creek Cheese Cellar’s Royer Mountain, and now use it in all the places where we would have used Parmigiano or Romano. Clover Creek actually calls the Royer Mountain a Romano-style, but its deep buttery richness rivals that of the King of Cheeses, Parmigiano Reggiano, with perhaps a bit less sharpness, and a bit more bucolic Pennsylvania terroir.
