No pics of last year’s Christmas goose, so here’s one of the last time we made rabbit. Marcella Hazan’s recipe. Delicious.

It is starting to dawn on me that Dusty and I have offered to host Christmas dinner for both of our families, and maybe some friends. While not a huge crowd, this is, objectively speaking, more people than will fit around our dining room table. In addition, while we do have a North Mountain Pastures ham waiting for just this occasion, not everyone we’re expecting eats ham — and maybe that ham isn’t actually enough for the number of people we’re talking about having over anyway? It seems like I have some figuring out to do, and preferably pretty soon.

Of course, I’m pretty excited about it — having people over for dinner is pretty much my favorite thing, and since Christmas is on a Monday this year, I’ll have Christmas Eve available for prepping for the first time in Radish & Rye history (okay, only two Christmases prior to this). I think, in addition to the ham, we might do a rabbit. Or a goose. Or maybe both! It’s all very exciting. (As a side note, I believe we made a goose last year, but apparently I didn’t take any pictures of it! If nothing else, we need to do it again so I can document it.)

Anyway, if you might also want a rabbit or a goose for your Christmas dinner (or any other meal, for that matter), we can secure one for you from Pecan Meadow Farm in Newburg, and have it available to be picked up and paid for at R&R next week (that’s 12/21-12/23). Daniel and Lois raise a wide variety of pastured animals, and use all non-GMO supplemental feed for their poultry. Dusty and I regularly order meat from Pecan Meadow when we’re looking for something we don’t stock at R&R or haven’t gotten in our North Mountain Pastures CSA share, and everything we’ve had has been outstanding. If you’d like us to order something for you, just talk to us at the stand, or email by Monday (that’s 12/18).

On a this-week note, I’m sorry to report that I have not yet tried a salsify recipe, but have on deck to make this Lemon Roasted Salsify tonight (scaled for two people/the .6 lb bundles we’re selling). If you’ve been waiting for my report, check in tomorrow (or whenever you visit the market this week)!
